Another fav dish of mine. Light tasty and fat-free.
Ingredients:Serve : 2 person
4 slices Mushroom
1/8 chicken thigh cube
Gingko (optional – I dont have this readily in my kitchen)
1 tsp Soya Sauce
1 tsp Dashi / Chicken Powder mix with 1 cup of water
1 tsp Mirin
First Crack eggs onto bowl, do not discard the egg shell, the ratio of Egg to Dashi+Seasoning is 1 Egg = 2 portion dashi on Egg shells. the pic shown above is only one portion so you need another portion. Mix it well.
Second I used to wonder why does Toppings of chawan mushi in the restaurant float on the surface while my chawan mushi sink right down. Warning.. to do the following will take more time.. Use strainer, pour one third of the Egg mixture. Steam them on high heat, it should take only 5-7 min
Third When Egg turn paler, start adding chicken and the rest of the toppings in. Turn to low heat and cook for 10-12min. You can blanch the chicken first to make sure that it cook well.
