We were invited to my cousin’s (Ms Chang) place for New Year Eve Cook & Dine, so I took this opportunities to “action” this week Cookbook Challenge. As this week theme is Soft, my first thought goes to cake – I remembered my mom used to bake us Swiss roll (Bolu Gulung in Indo), she would normally use pineapple jam or stawberry jam, since Ms Chang said she has durian, we decided to make Durian cream Swiss Roll.
The reason why Durian Swiss Roll turns Durian Sponge Cake is because we had a slight mishap, we spread durian cream on the presentation side (oooopss – due to excitement i believe hahahha), so instead of rolling it up, we have to stack it up instead ha ha ( I can assure you- it doesnt affect the taste whatsoever – heaven!!!!)
This recipe is adapted from my cousin’s Magimix Recipe book
Ingredient
5 egg whites
5 egg yolks
80 gr caster sugar
50 gr self raisin flour
30 gr corn flour
3 tbsp corn oil
1/4 tsp cream of tartar
Vanilla essence
3 tbsp water
Durian paste
120 gm. whipped fresh cream
150 gm. fresh durian (add more if you like it
1 1/2 tsp. gelatine powder + 40 gm. water (soak and let it bloom for 5 mins.)
Preparations
(1) Preheat oven 180 celcius
(2) Whisk white eggs until see bubble then put cream tartar and pour in sugar slowly.
(3) Add vanilla essence into egg yolks
(4) Beat white egg until soft peak around 6-7 minutes
(5) Put the egg yolks beat for 30 seconds (with machine running)
(6) Turn off the machine
(7) Pour in 3 tbsp water, one tbsp each time with pulse motion
(8) Add flour into the mixer with pulse motion as well
(9) Add 3 tbsp corn flour with pulse motion
(10) Line the Tin with baking paper
(11) Pour batter into a rectangular tray and bake for 20-25 minutes
(12) Take out from tin and leave to cool onto a wire rack.
(13) Microwave the gelatine mixture for 20 seconds.
(14) Add in the durian puree into the warm gelatine mixture and mix till well mixed.
(15) Fold in whipped cream and mix gently till evenly mixed.
(16) Spread cream onto swiss roll cake and then roll it up into a swiss roll.
(17) Chill in refrigerator before slicing.
(18) Serve

Hehee, it looks great as a layered cake even though it’s supposed to be a sponge roll!
Even though I don’t like durian, I think it still looks really yummy as a layer cake! Hope the New Year’s party was good!
