Prawn 4.0 – Iron Chef Chilli Prawn July 21, 2009

Do you watch Iron Chef? Chen Kenichi is my most favourite chef, next is the cute French Chef – Hiroyuki Sakai ha ha. there is never an episode where Chef Chen did not cook with “Dou Ban Jang” – hot bean paste. Being Indonesian, I am most familiar with Sambal but not Dou Ban Jang. Since watching the show i have been experimenting with the hot bean paste, one of our favourite is this Chilli Sauce that Iron Chef made in one of the show and i always cook it with prawn or fish fillet, hmm i think it might work well with crab as well (have to figure out how to clean/cut crab first hahaha)

Oh yeah when you may think there is too much gravy when you are half way cooking dont worry, it will thicken once you add in potato starch solution and trust me the gravy with rice. owwwwwww, yumm (i do sound like i love my food isnt it hahaha self-love). give it a go!!!

Chilli Prawn Ala Iron Chef

 

Ingredients

(A)

  • 8 large prawn (deviened & peeled)
  • 1/4 tsp salt
  • pinch of pepper
  • 1 egg white
  • 1 tbsp potato starch

(B)

  • Sauce -  1 tbsp hot bean paste + 3 tbsp tomato sauce + 1 tbsp mince garlic + 1 tbsp mince ginger
  • Stock -  1 cup water + 1/2 tbsp chicken powder + 1 tbsp cooking wine + 1 tsp sugar
  • handful of pea/carrot and slice green onion
  • 2 tbsp potato starch solution (1 tbsp potato starch + 1 tbsp water)
  • 1 egg yolk (whisk lightly)
  • 1/2 tsp rice vinegar

Preparations

  • Heat 2 tbsp oil in a non stick wok, add (A) in, let the prawn cook on one side for 1 min and then turn to the other side for another minute, set aside
  • if there is still remaining oil in the wok you dont need to add more oil, if not just add 1 tbsp oil in and turn to low heat simmer mixed Sauce in until fragrant
  • next add mixed stock in, bring to a boil, add prawn, pea and spring onion in
  • thicken with potato starch solution, dont pour all at one go, bit by bit, mix it in. when the sauce has thicken, turn of the heat and pour whisk egg yolk in.
  • lastly before serving add vinegar in.

      Ironically, I made chilli fried rice yesterday when playing around. Sauted some extra beef bits, added a bunch of garlic, then samba oleg and to ban jan, finally addding pre-cooking white rice. Yummy, but spicy :D

  1. A great idea for future recipes this. Thank you for sharing it. Have you noticed how so many people appear to be cooking again? I wonder if the lack of funds due to the current climate has something to do with it and we all appear to be cooking again! its great!

      Hi Ashleigh,yeah everyone is very excited about cooking nowadays. i guess people are more interested in knowing what they eat and how it is being cooked.
