Hey Sam, hope you like this Thai Fried Rice Recipe.
There are few simpe rules to cooking fried rice
- Rice – should be cold/room temperature or from overnight rice because if it is warm, when you stir fry it, it will turn soggy.
- Ingredients – All ingredients shoud be ready by the time you start cooking.
- Heat – you need to cook fried rice on high heat, from start till the end, do not turn the heat up and down.
If you do not like prawn, you can replace it with any meat or if you are vegetarian, you can add tofu/tempeh as well. Normally if I use brocolli or carrot, i blanch them in hot water first.

Thai Fried Rice (Khao Pad)

Thai Soya Sauce
Ingredients
- 2 tbsp oil
- 6 prawn (marinate with 1 tsp soya sauce, 1 tsp cornflour)
- 1 tbsp mince garlic
- 1 egg
- 1 bowl of overnight rice
- 1/4 onion slice thinly
- handful of vegi ( I only have celery leaves in the fridge)
- Slice fresh chilli
- 2 tbsp Thai Soya Sauce
- 1 tsp fish Sauce
- 1/4 tsp sugar
- pepper and salt to taste
Preparations
- heat frying pan with oil then add in mince garlic and prawn, when the prawn turn red in colour , crack an egg in do not stir for 5 second and then stir it together, wait till egg is set and not runny before you add rice.
- keep stirring until egg, prawn and rice mix well (avoid smashing the rice), then add soya sauce, fish sauce and sugar, continue stirring for 1 minutes.
- start adding onion,chili and vegies in, stir again for a minute or two. turn off the heat, add pinch of pepper. ready to serve with cut tomato and cucumber (if you had any
).
