Instead of having milk and cereal as breakfast in the morning, I grow up having Srikaya and bread. Mom would steam  instead of toasting the bread and then we would coat srikaya on the warm steamy bread.

Original Srikaya recipes takes hours and hours to make however recently i have been visiting many many cooking blog and found easy way to make srikaya. The method I has chosen use rice cooker.

Ingredients

  • 2 Eggs lightly beaten
  • 125ml coconut milk
  • 1/2 cup palm sugar
  • 2 pandan leaves, tied into knot

 

Preparation

  1. in a pot, melt palm sugar and coconut milk and pandan leaves on a low heat.
  2. turn off heat, add beaten egg into the mixture and stir well
  3. pour the mixture into rice cooker. select Porridge setting. this will ensure that egg mixture is heated slowly, leave the egg mixture for about 2 hr, the egg mixture has turn slightly curd (not to worry)
  4. take pandan leaves out, pour the egg curd onto food processor and blend them until smooth.
  5. pour kaya onto jar. when kaya cool down, the consistency will get thicker.
