This recipe is adapted from “Asian Flavors of Jean-Georges” by Jean-Georges Vongerichten.

I don’t normally cook Indian curries, most of the time it is either Indo,Thai or Jap curries and it’s also interesting that this curries use vinegar. The recipe called for red wine vinegar however I used plum vinegar instead (dont think this is a right move because it has really high salt content :( ). Strange things is my pork vindaloo taste abit like beef rendang ha ha ha

Cookbook Challenge 1.0 – Squirrel Patterned Parrot Fish with Sweet & Sour Sauce

OK here is my first take on Cookbook Challenge Week 1 – Citrus.

The recipe is adapted from “Fish – Chinese Style Made Easy” by Wei-Chuan Cookbook.

The fish I am using today is Parrot Fish (Wrasse), my angler caught it on the weekend, it has quite tough skin and thick meat, which i thought would be good for deep fry to get crispy texture.

For the sweet and sour sauce, the recipe calls for vinegar however I am replacing it lemon juice instead (so much for a citrus theme isnt it?)

Bread Crumbs 1.0 – Cheese & Herb Crumbed Mushroom

Mushroom? I like. Crumbed Mushroom? bring it on. I normally leave the stem intact but you can trim the stem if you want. Healthier alternative would be to bake them in the oven. Lesson I  learn – To avoid the crumbed mushroom to burn to quick, make sure that the frying oil is not overly hot when you deep fry the mushroom or else the mushroom will just go dark brown as soon as you dip the mushroom in.

Ingredients

  • Button Mushroom
  • Egg
  • Parmesan Cheese + Breadcrumb + Mixed Herbs + Garlic powder

Preparations

  • place egg in a shallow dish and whisk until combined well
  • mix parmesan cheese, breadcrumb, herb and garlic powder in a seperate dish
  • dip one mushroom at a time in egg and then breadcrumb mixture
  • heat oil and deep fry mushroom until golden brown. or place mushroom in a hot oven for 5-6 minutes. ready to serve with mayo or chili & tomato sauce combi

Yes, I am up for a challenge!!

I have been considering on a few challenges recently,

  • doing 90 days Bikram Challenge, I have done 30 days previously but 90 days for me is hard work!
  • or doing the Yoga Aid Challenge (completing 108 sun salutation for charity) – Melbourne 6 December – still deciding hmmmm
  • and then I visited Rilsta @MyFoodTrail and saw The CookBook challenge, instantly without hesitant I knew i found the “Challenge”. In short, I will make use of my cookbooks to cook one dish (committing to only one for now) per week for 52 weeks according to the theme of the week. A jar of bread crumbs – how many dishes can you create???

Whenever  I visit my local supermarket to get sandwich loaf, there are always 2 for a fivers deal, good price isnt it but for a small family, how am I going to be able to finish those loaves in a few days times!!!

I guess I have a few options one is to freeze one loaf to keep it fresh or if I can’t finish it in a few days times i will just make my own bread crumbs.

When I am at the market, I saw all different herbs available for sale, do I need Coriander? Yes how about Mint? Yes Basil? Yes Spring Onion? Yes. Oh oh some vietnamese mint would be nice in beef soup too and then when you get home, you realised that your fridge is a herbs Galore!!!

Next things you do is every single meals is themed with herbs ha ha. here is one easy one Mince Pork Herb Salad Rice. I used this Minced Pork Recipe and Vietnamese Dipping Sauce

Herb Salad

  • Carrot
  • Onion
  • Mint
  • Vietnamese Mint
  • Coriander
  • Cherry Tomato

Spicy Beef Salad

This is my 10 min warm spicy beef salad, you have the options to marinate the beef first or just omit the marinate step.

I think beanshoots  is the easiest vege to cook, I can have beanshoots everyday and night (probably not a good idea but I sure dont mind), for me beanshoots is better  under cooked than over cooked as i love the slight crunchy texture.
